BBQ Halloumi Kebabs with Red Onion & Apple Cider Chutney

Ingredients

  • 150 ml Brothers Apple Cider
  • 250g halloumi cheese, cubed
  • 1 red pepper, cubed
  • 1 yellow pepper, cubed
  • 1 red pepper, cubed
  • 1 red onion, peeled and cut into wedges
  • 8 cherry tomatoes
  • Kebab sticks
  • For the chutney:
  • 3 red onions, peeled, halved and sliced
  • 2tbsps cider vinegar
  • 2tbsps dark brown sugar
  • 1 large red chilli, seeds removed, finely sliced

This cider has no pears but plenty of juice from the most bittersweet apples we could find.

BBQ Halloumi Kebabs with Red Onion & Apple Cider Chutney

Method
• Thread the halloumi, peppers, red onion and cherry tomatoes alternatively onto the wooden kebab sticks.
• To make the red onion chutney, place all the ingredients into a saucepan, bring to a simmer and allow to cook gently for approx. 30 mins until softened.
• Barbeque or griddle the kebabs, turning at regular intervals. Serve with the red onion chutney and a green salad.
